With grease you have:
Standard 4 in 1 grease
You have high temp wheel bearing grease
You have a special USDA approved grease with is eatable for use in food processing plants around the food being processed:

Viscosity of an oil is how feeling or fast it flows: The higher the viscosity the slower it flows:

An Olympic bar will roller bears instead of ball bearing because of the weight load placed on it. Or lateral stresses which roller bearings handle better. Ball bearing are not made to handle lateral loads.

Smith sliding machine should have roller bearings. Although a lot of the cheap consumer ones have bronze bushings instead of either roller or ball bears.
